S'mores Blondies

This recipe is part 2/2 for finding the best s'mores inspired baked good! This recipe is a combination of my previous recipe S'mores Bars, adapted from the Beginner's Baking Bible by Heather Perine, and another recipe of infinitely adaptable blondies from the Smitten Kitchen blog written by Deb Perelman. I decided to try this because I wanted something a little more gooey and sweet for the s'mores recipe. I absolutely love blondies so I thought they would go really well with this s'more theme. 

S'mores Blondies:

Servings: 12 or more (depends on how you cut them)
Time: 90 minutes (includes oven time)

Ingredients - 
  • 1 stick (4 ounces) unsalted butter
  • 1 cup light or dark brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon flaky seasalt, or 1/4 teaspoon coarse sea salt
  • 1 cup all-purpose flour
  • Optional (I would suggest that you put these in the batter if you are not adding the chocolate and marshmallows on top): 1 1/2 cups mix-ins of you choice (chocolate chips, chopped toasted walnuts, etc)
Toppings:
  • 1 cup mini marshmallows
  • 1 cup chocolate chips


Steps

First, pre-heat oven to 350℉. Melt the butter in a small saucepan for about 5-6 minutes. Make sure to stir it as it cooks. It's ready when it's brown and toasted on the bottom. The pour it into a medium to large-sized bowl and whisk in the sugar until combined well. It should be cooled down and lukewarm, if it isn't wait a few minutes till it's cooled down. Then whisk in egg, vanilla, and sea salt. Stir in the flour last, and any add ons if you choose. 

Lightly spray an 8-by-8 baking pan with cooking spray, or line with parchement paper then coat with cooking spray. Scrape the batter into a prepared pan (it will be very thick) making sure it is evenly spread out. 
Bake for 15-20 minutes or until lightly brown at the edges and it looks slightly underbaked. (This will make it more gooey.) 


Then as soon as they are out of the oven, spread the chocolate chips then the marshmallows on top. Set the oven to broil level 1, and let it cook on the top shelf for 1-2 minutes or until lightly toasted. (Like I said in the s'mores bars recipe, you need to turn the pan around half way through to get an even toastiness on the marshmallows.) 

Finally, let them cool for about 10 minutes then cut into even squares. Best served right away for maximum deliciousness!
